Cobolorum has a tiny whisper of sediment, a fine persistent bubble, a true-north soul, and the cheer of your baby finally sleeping through the night.
Mineral driven, bone-dry sparkler of organically farmed Riesling. Cirtus and tropical fruit notes, great acidity. Native yeast fermentation, no filtering or fining, roughly disgorged but otherwise left as is without any additions including no added sulfites.
Hand-harvested from Kick On Ranch Vineyard in Los Alamos, Santa Barbara County, grown on soils composed of ancient beach & diatomaceous earth, chert, limestone.
